Our Protein Innovation Center (PIC) serves as a dynamic space for showcasing and demonstrating these state-of-the-art processing systems.
Acting as a subject matter expert, this role will be responsible for:
- Exceptional communication, verbally and electronically, with internal and external customers
- Maintain facility in a show-case ready state, including washing and sanitizing of all surfaces following events.
- Manage multiple, concurrent projects at the same time.
- Food safety protocols with direct relationship to Codex Alimentarius (GFSI), guidelines.
- Create effective strategies when unexpected business situations arise.
- Act as SME for basic knowledge in protein marination and product curing.
- Basic test kitchen supplies and tabletop appliances/equipment.
- Troubleshoot equipment to determine variables & deficiencies.
- Record keeping, scheduling, protein inventory and supplies.
- Developing and organizing standard PIC training programs.
- Outsource suppliers for protein and dry ingredients.

Requirements:
- Bachelor’s degree in food science or related discipline.
- Culinary training, with experience in ingredients, meat science, sanitation, and processing preferred
- Experience in high-speed food manufacturing equipment strongly preferred
- Meat processing experience: (5-years).
- Knowledge in beef and pork primal - cuts.
- Basic meat and poultry laboratory science.
- Knowledge in processed meats, dried cured, course ground and emulsification.
- Knowledge of ingredient functionality as it relates to food product development.
- General understanding of USDA/FDA food safety directives
- Food safety protocols with direct relationship to Codex Alimentarius (GFSI), guidelines.
- Previous or current HACCP certification
- Global Food Safety Initiative background will be a plus.
- Valid Drivers License
- Must be willing to travel locally, to pick up supplies and ingredients.
